A small roastery in Kathmandu

Himalayan Nuts started because the flavoured makhana on shop shelves here was either stale, over-oiled, or imported at three times what it should cost. Roasting it properly is not complicated. It just has to be done in small enough batches to pay attention.

Four steps, in order

  1. 1

    Seed

    Fox nuts arrive raw and graded by size. Bigger seed puffs bigger and holds seasoning better, so we buy on grade rather than on price.

  2. 2

    Roast

    Heated in batches until each seed bursts. This is the step that decides whether a makhana snaps or goes chewy, and it cannot be rushed or done in bulk.

  3. 3

    Season

    Tumbled warm with the flavour so it clings to the crater of each piece instead of sliding off. Salt is Himalayan pink rock salt, ground here.

  4. 4

    Seal

    Bagged and sealed the day it is roasted. The clear window is there so you can see the size and colour of what you are buying before you open it.

Where we sell

Mostly direct, through this site and through Instagram, where the brand started. Orders inside the Ring Road usually go out the same day; the rest of the valley takes a day or two.

We are always happy to talk about bulk orders, gift hampers, or stocking the pouches in a shop or café.

Questions we get

Is makhana actually healthy?
About 350 calories and nearly 10 g of protein per 100 g, almost no fat before seasoning, gluten free, and low on the glycaemic index. It is puffed with heat rather than fried, which is the part that matters most.
How long does a sealed pack stay fresh?
Four months from the seal date in an unopened pack, kept dry and out of direct sun. Once opened, roll the pack down and finish it inside a fortnight or it softens.
Do you deliver outside the Kathmandu valley?
Yes, by courier. Delivery inside the Ring Road is usually same or next day, the rest of the valley one to two days, and anywhere else in Nepal is quoted when we call to confirm the order.
Can I order in bulk or as a gift hamper?
Yes. Mixed cases for Dashain and Tihar, office orders and cafe supply all work — send us the quantities and we will price it.
